Happy LOVE day!
Valentine's Day was different for many reasons this year. First, on a Sunday -- kinda different and we just celebrated on Saturday night anyway! Second, we were ALL sick. Every one of us. I've decided it's ok to just get it all over with at once instead of having weeks of sickness as it rotates through everyone. So, we all spent the weekend being sick together. You know what they say, a family who gets sick together...no, they don't say that at all, do they?!
We still managed to have a really nice and LOVING weekend! It actually started on Thursday night with a neighborhood V-day party. It was a really funny white elephant, no-kids dinner party and it was just a lot of fun! We are soooo impressed and so excited for the neighborhood we moved into. There are TONS of young families like us and just a really, really fun group of people. They have made us feel so welcomed here, honestly. People bringing over treats to meet us, shoveling our snow, little knocks on our door from the adorable two little girls next door just to say hi, and then a really fun party where we were able to get to know people a lot better! Everyone has just been so welcoming and kind and interested in our little family and it has made the transition here so much easier. I am so looking forward to the friendships we will have here!
Saturday night, we got together with my parents and my two siblings and their spouses to have a yummy dinner at Tepanyaki. It was a fun night to spend together! And of course, we had to hit up Target afterwards since there is no Target up here -- YIKES, how will I ever survive?! Now, that's a V-day to remember, right, shopping at Target?! I don't think the guys necessarily thought so, but they obliged us!
Sunday, we all just stayed home. ALL day. We were going a little stir crazy! It's just not fun to have everyone sick! We did manage to have some V-day love, though! I made the most yummy treat -- Red Velvet Whoopie Pies with a marshmallow cream center! They were delish!! The girls got a few little goodies and we just were able to spend the day relaxing together, trying to recover!
It's nice to have an extra special day to reflect on the love we have for the special people in our lives. I feel so lucky to have the beautiful family I have. It's not hard at all to love each and every one of them! And I do! A LOT! And an amazing extended family and such kind and genuine friends. A girl should not be so blessed! Much love to all of you!!

Here's the recipe for the whoopie pies if you want some yum!
Ingredients:
½ tsp Baking Soda
1 egg
1 cup Sugar
1 cup Flour
½ cup Butter
1/3 cup Water
2 tbsp. Cocoa Powder
¼ cup Buttermilk
½ tsp Vanilla Extract
1 - 1oz. Bottle Red Food Coloring
Whisk together flour, sugar, and baking soda and set aside.
In a separate bowl, whisk together the egg, buttermilk, vanilla, and red food coloring.
Pour water into a small sauce pan and add water, cocoa and butter. Bring to a boil. When cocoa mixture has been brought to boil, pour over the flour and sugar mixture and mix lightly.
Add remaining ingredients and stir until smooth.
Spoon onto cookie sheet, making shallow rounds — OR— Bake in whoopie pie pan at 375 for 8 - 12 minutes or until toothpick or cake tester comes out clean. Remove from pan and let cool on a cooling rack.
Filling:
2 oz. White Chocolate; melted and cooled
¼ cup Cream Cheese
¼ cup Butter
1 cup Marshmallow Fluff ( ½ of a 7 oz. jar )
1 tsp. Vanilla Extract
1 ½ cups Powdered Sugar
Beat together the butter and cream cheese.
Add white chocolate and vanilla, mix well.
Add powdered sugar and marshmallow and whip till light and fluffy.
Spoon filling onto one whoopie cake, then add the other side, making it like a sandwich.

I had no idea you were sick today when I sent you a text and rubbed it in your face (probably seemed that way since you are so sick, but I just wished you were with me) that I was at lunch without you......SORRY! I hope you all feel better soon, there is nothing worse than sick kids AND parents!! Wish you could have joined us today, we will plan something another week.....let me know what works for you!!
